Sweet Potato and Apple Casserole is an amazing combination of sweet and savory flavors that even kids will love (I speak from experience)! With only 5 ingredients, this dish is both easy and convenient to add to your fall meal rotation.
It’s my favorite time of year! Fall. There are a lot of reasons I love fall but, the food is really what makes me excited. The variety of produce in season now never gets old; it’s so versatile! Particularly, our favorites…sweet potatoes, carrots, and apples. So what’s a girl to do but make a sweet potato and apple casserole?
I started making this recipe last year. One of those dishes that was an experiment but so simple that I figured I couldn’t screw it up. But originally, it wasn’t meant for me….
We did Baby Led Weaning with our baby girl and every day we had afternoon smoothies. This originally started out as one of her smoothie blends (her favorite, by the way) as a way to get her more veggies before she became the veggie-holic that she is now. Well, it was so good that when I started tasting it before I blended it up, I couldn’t keep my fork out of it….so I decided to make a more grown up version.
To Make this delicious Sweet Potato and Apple Casserole
Ingredients:
- 1.5 lb Sweet potatoes – peeled and cut
- 4 large carrots – peeled and cut into chunks
- 3 medium apples – peeled and diced
- 2 tsp olive oil
- 1/2 tsp cinnamon
- 1/4 tsp salt
The form you have selected does not exist.
Directions:
- Preheat the oven to 400F/200C
- Get all your ingredients prepped and ready, cutting all the produce into chunks about the same size so they cook evenly
In a medium baking dish combine all ingredients, hand tossing to ensure even coating
4. Cover and bake for about 90 minutes -or until the veggies are fork tender and fall off the fork when pierced.

This blend goes so well with pretty much any main dish. The natural sweetness of it is a really nice balance to the (typically) saltier meat dishes. It has NO added sugar in it, and fits all diet plans such as 21 day fix, whole 30, paleo and more.
