Is there any better flavor than something sweet with a bit of cinnamon? Ok, I know that’s debatable, but it’s one of my favorites. A Cinnamon Sweet Potato Smoothie is gonna make it on your smoothie rotation, I guarantee it!
I know what you might be thinking….sweet potatoes in a smoothie? Ashley, what are you thinking with that. I know I come up with some pretty inventive stuff sometimes but it’s really good!
Backstory: we did Baby Led Weaning with our girlie, who’s now a toddler…a method in which purees are a bit of a no-no. BUT, smoothies aren’t off limits. Hey, when you’re a mom, you gotta do what you gotta do! So I had made a big batch of my Sweet Potato and Apple Casserole and it tasted so sweet and cinnamon-y that I had to try it blended, and my girlie went CRAZY for it (I really liked it too for the record, but it became her favorite smoothie)
So…I will admit I’m completely cheating and republishing the EXACT same recipe as my Sweet Potato and Apple Casserole, but with a little preparation twist. Blending it into a smoothie.
This recipe is vegetarian, paleo and clean eating, and vegan friendly.
To make A Cinnamon Sweet Potato Smoothie:
Equipment:
- A good blender
- Your favorite casserole dish
Ingredients:
- 1.5 lb Sweet potatoes – peeled and cut
- 4 large carrots – peeled and cut into chunks
- 3 medium apples – peeled and diced
- 2 tsp olive oil
- 1/2 tsp cinnamon
- 1/4 tsp salt
- Honey, optional
Directions:
- Preheat the oven to 400F/200C
- Get all your ingredients prepped and ready, cutting all the produce into chunks about the same size so they cook evenly
- In a medium baking dish combine all ingredients, hand tossing to ensure even coating
- Cover and bake for about 90 minutes -or until the veggies are fork tender and fall off the fork when pierced.
- Cool completely, refrigerate if you like, and then add the casserole into the blender. Add some honey, if you like a little extra sweetness. Blend until smooth. Serve chilled
