To be honest, this salad came into our rotation as part of a clean out the fridge leftovers meal and it’s evolved from that time. My logic – if a certain well loved company can make a whole line of bath products and body sprays from this combo then wouldn’t the actual food combination work just as well?
Yes. Yes it does. Frankly, it’s even better!
I know I say this about ALL my recipes, but this one is the be all and end all of this phrase…It’s so versatile!!! Wanna switch things up for breakfast? Have this salad. Something fast for lunch? It works with pretty much all diets, however the melon in it is one that you’ll have to go easy on if you’re on the keto diet. It’s gluten free, 21 day fix approved, vegan (just double check your balsamic vinegar doesn’t have gelatin in it), whole 30, and all the rest!
Cucumber Melon Salad Recipe
This salad is so easy, it’s almost silly to make a recipe out of it, but it’s too delicious not to share it!!
You can use any melon you want to. Cantaloupe, Watermelon, Honeydew, Gaia, whatever floats your boat. You can even make a combo of 2 different melons!
More often than not, we use watermelon because it’s really inexpensive where we live. However, Cantaloupe is my personal favorite with this recipe.
You start with equal amounts of melon and cucumber. Add your favorite herb. Today, I used basil but depending on what I’m putting with it, I may use mint. Drizzle on one of the 2 choices of dressings I’m about to get into. Boom! A delicious, elegant, crispy, refreshing, healthy (I could keep going with the adjectives….) beautiful, decadent, colorful, (more? ) vibrant, scrumptious, delectable, mouth-watering (ok, I’m done) Cucumber Melon Salad.
So, let’s talk about the dressings. There are 2 different ones that I use depending on the occasion, time of day etc, etc. A Lemon Vinaigrette, and a Balsamic Vinaigrette.
If I make the salad with mint, serve it earlier in the day, or with fish, then I typically use the lemon vinaigrette. If I make the salad with basil (although that goes great with lemon too), serve it with red meat, or later in the day, I like to go with the balsamic vinaigrette.
Both are equally delicious in my opinion. It all depends on you!

Ingredients
- 3 cups Watermelon
- 3 cups Cucumber
- Fresh Basil to taste
- 1/4 cup dressing or to taste
- 1/4 cup balsamic vinegar -OR- Fresh lemon juice
- 1/4 cup extra virgin olive oil
- 2 Tbsp honey or agave nectar
- pinch of salt
Instructions
- In a small container or bowl, mix the dressing of your choice and set aside
- In a large bowl, combine the watermelon, cucumber and basil.
- Spoon dressing over the top and gently toss to combine. Serve immediately.
- *If you are making this recipe ahead, wait to add the dressing. Chill in the refrigerator until ready to serve.
