My favorite birthday tradition, while living in the US, was having dinner at a Japanese style steakhouse. If you’ve never been to one of these places, they are so much fun! The atmosphere, the chef’s tricks, the variety of food…which of course includes Japanese Onion Soup!
The foodie in me loves to watch people cook, but the food is amazing too. Since moving to Finland, I’ve had to take a break from this tradition. We haven’t been able to find these types of restaurants close by. Thankfully, some of the dishes are really easy to make! Japanese Onion Soup is one such dish.
Like most cultural type recipes, every restaurant or family has their way of doing it. There are indeed different kinds of Japanese Onion Soup, such as the miso variety, or the fried onion variety (which you can feel free to add by the way, it works here too!) I’m sure if you were to look at most hibachi restaurants’ Japanese Onion Soup Recipe, the list of ingredients would be much longer. I will say though, as far as taste goes, this comes pretty darn close to quite a few versions I’ve had. (not the same, but close, and much healthier)
This Japanese Onion Soup, hands down, has to be the easiest soup I’ve ever made. It’s only 4 ingredients, takes less than 10 minutes to make.

This recipe is gluten free, dairy free, and follows most popular diets. It’s perfect for a quick, light meal and is also ideal for those sick days where all you want is hot liquid (speaking from experience as that is exactly how I feel as I write this. Darn winter colds with sore throaty symptoms!!).
To make Japanese Onion Soup, you will need:
If you’re making this recipe for sick days, if you happen to have bone broth made with beef and/or chicken bones, this is the perfect opportunity to use that and give your immune system a boost.
Typically I would say that unsalted or low sodium broth is preferable. However, there really is no need to season this soup, so if you use regular broth, have a taste test at the end. If you find it’s saltier than you like, just add water until it tastes right.
Vegetarian/Vegan option Sub all vegetable broth in lieu of chicken and beef broth. It won’t have the same depth of flavor but it will still be comfort in a bowl.
Ingredients:
- 4 cups (32 oz) chicken broth
- 4 cups (32 oz) beef broth
- 1/2 pound mushrooms, sliced very very thin.
- 3-4 green onions, both white and green parts sliced thinlyOptional extra ingredients might include Miso, fried onions, or fried wonton strips. As I mentioned every restaurant/family has their way of doing it and while some of these extras aren’t as healthy…if you’re looking for it to taste like your favorite restaurant’s version, then by all means, add some extras.
Instructions:
- In a soup pot, boil the beef and chicken broth. This is the most time consuming step. How great is that??
- Once the broth is boiling, turn off the heat and add in your very thinly sliced mushrooms and green onions.
- For extra fun, serve your soup with some Japanese style bowls and spoons!
- That’s it! All done. Dish into a bowl, eat, and relax
