Ever wonder how to make a fresh fruit cake? I am pleased to tell you that if you can cut fruit, you can make this cake! And it’ll probably be the healthiest cake you ever “bake”.

I love to bake, but when it came time for my munchkin’s first birthday I just couldn’t get on board with the whole smash cake trend.  Y’all know I’m not a fan of processed sugar and prefer natural sugars whenever possible, but somehow, I managed to make a kid that is not a carb fan…..not the worst problem to have when it comes to kids.

To top it off, we had some dietary concerns to watch for with those attending her little soiree.  So, I ran into the “how do I make everyone happy” issue.  This was our answer.

How To Make A Fresh Fruit Cake

In addition to being both beautiful and easy, they are incredibly versatile. They work with pretty much all the diets out there, kids and adults both love it.  You can use it for birthdays, baby showers, bridal showers, brunches, whatever floats your boat. I just love recipes that you can’t screw up.

How To Make A Fresh Fruit Cake

*This recipe is gluten free, vegan, dairy free, and egg free, with no added sugar

The form you have selected does not exist.

You will need:

  • 1 watermelon (for only on the base tier, a personal sized watermelon is perfect, if using watermelon for 2 tiers, get a large one)
  • * 1 whole honeydew or cantaloupe melon – optional
  • 3-4 cups of a variety of your favorite fruits and scraps from unused melon.
  • toothpicks
  • cookie cutters or melon balling tool (optional)
  • a large base plate or pie plate

How To Make A Fresh Fruit Cake

Instructions:

  1.  For your base tier. Turn the watermelon on its side and find a section 6-12 inches wide (depending on the size of your melon) where the circumference is relatively even.  From these points, cut the ends of the melon off.  Then as evenly as you can, trim the rind off, removing all the white parts, and then trim up any edges so that the layer is as round and even as possible.  Also, check the top and bottom and make that as level as possible.How To Make a fresh fruit cake
  2. For the second layer: if using a different melon, follow the same procedure as in step 1.  If using honeydew, cantaloupe, or a similar melon, take the seeds out of the middle.  Don’t worry if there is a hole at both sides, I will tell you how to fix that in a minute. *If you are using watermelon for the second layer you can either cut your large base layer in half or find a skinnier section of the melon and cut it into shape for a second layer.
  3. Cut your remaining fruits and melon into desired shapes and sizes for decorating.

To Assemble A Fresh Fruit Cake

  1.  Lay your base tier on your serving plate. Stick 3 or 4 toothpicks into the bottom side of the top layer and press the top later into the bottom later.
  2. If there is a hole at the top of your cake, fill it with melon scraps.
  3. Starting with the top of your cake arrange your choice of fruits, candles, or other decorations.  Use toothpicks to hold everything into place
  4. moving to the middle section, arrange fruits, secure with toothpicks, just like the top layer.
  5. At the base of the cake, scatter your remaining fruit around the cake, filling in the empty space.
