Healthy Chunky Monkey Muffins

Have you noticed some combinations of flavors are awesome no matter what you try with them?  Chunky Monkey is one such combination.  Sweet bananas, salty peanut butter and rich dark chocolate. I mean, that recipe for chunky monkey muffins pretty much a winner no matter what else you add to it.

This recipe I originally made for my baby girl.  We do Baby Led Weaning and I’m always looking for recipe ideas to try with her. This method has let her to be so adventurous with food. She’s learned that Mama eats everything she does. She’s just now developing her taste for sweet stuff and with fall being in full swing here, I just want to bake ALL. the. things. But, I don’t want either one of us eating tons of sugar…

Y’all know I have a soap box about sugar…particularly white sugar. Baking with healthier, clean substitutes has been an adjustment, but SO worth it.

I’ve noticed I tend to get a little creative with my recipes when I have a lot of stuff that needs using up either in the fridge or the pantry and chunky monkey muffins are no exception. This recipe had quite a bit of experimenting….

Remember how I just said I was on a baking spree, so around this same time I also made some carrot zucchini muffins and for some reason had 4 lbs of carrots in the fridge (how does that happen??) so I even tried one version with carrots in it. I know that sounds kind of gross but given the spice blend being a bit similar to carrot cake, I figured it couldn’t hurt.

It actually turned out pretty good, but I have to say the classic chunky monkey muffins tasted much better (big surprise right?)

These muffins do get a nice big nutritional boost with chia seeds and taste pretty darn good with the use of flax eggs vs regular eggs. You should know right now I’m a huge fan of both. Chia seeds and flaxseeds are 2 items that should ALWAYS be in your pantry.

But enough about that. On to the recipe!

Healthy Chunky Monkey Muffins

**Note: This recipe contains honey. If serving to children under 1 yr old, use real maple syrup instead.

Ingredients:

  • 2 ripe bananas
  • 2 eggs (or 2 flax eggs)
  • 1 cup peanut butter
  • 1/4 cup honey (or real maple syrup)
  • 1/4 cup coconut sugar
  • 1/2 cup greek yogurt
  • 1/3 cup milk (any kind will do)
  • 2 tsp vanilla
  • 1 3/4 cup organic all purpose flour
  • 1/4 cup chia seeds
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/3 cup chocolate chips

 

 

Directions:

  1. Preheat the oven to 375F. Line a muffin tin with paper liners.
  2. In a large bowl mash the 2 bananas. Then add the eggs, peanut butter, honey, coconut sugar yogurt, milk and vanilla. Whisk until combined.
  3. In a smaller bowl, combine whole wheat flour, chia seeds, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In 2 parts, mix the dry ingredients into the banana mixture.
  5. Lastly add in the chocolate chips and stir until evenly distributed.
  6. Spoon the batter into the muffin cups. Fill each liner to about 3/4 full.
  7. Bake for 14-17 minutes, until the muffins are golden on top and a toothpick inserted to the center comes out clean.
    Makes 20-24 muffins. Store in the refrigerator.
